BBQ Chicken Sandwiches

There are so many reasons to make or buy a whole, quality chicken. The ones they sell under the hot lamps near the check-out at your local supermarket are crap. The ones they sell for around $5 at Costco aren’t a ton better but in a pinch, are good. Best? If you aren’t raising and butchering yourself, you should pick up some “open range” chickens at your local Whole Foods, Co op or actually some of the Costcos now sell a pack of two, organic and free-range birds for a pretty good price.  (Quick Pontification: shouldn’t it bother us that the color of free range/organic chicken looks different than the big Foster Farms ones? What about all of that fat that needs to be cut off? It is gross, and I don’t get why people don’t see it, except for one big reason…I know…PRICE – more on that later).I try to keep a whole bird or two on hand at all times for two reasons: 1) it is more cost effective to cut up a whole bird yourself than having the butcher do it and 2) you never know when a roast chicken won’t be the perfect dinner!

I included a simple recipe for you to use your left over rotisserie chicken from Costco, the supermarket, packaged meat, or from your Sunday roast.  Just remember to save the bones, freeze them, and make stock later!

BTW…this is great for those mid-week dinners where you need something superquick for the kids who have football/soccer/scouts/rehearsal/too much homework. Plus, it keeps you out of the drive-through!

BBQ Chicken Sandwiches

2 cups shredded chicken
1 cup favorite BBQ sauce (bottle is ok!)
Min or regular size hamburger buns
Yep, that is all. Take a medium frying pan and bring to medium heat, add BBQ sauce and chicken, bring to a simmer and slather on the hamburger buns. Easy to serve with your choice veg, tater tots, or a quick salad.  ENJOY the GUILTLESS homemade meal!
