Bean Dish

My Gram (dad’s mom) had a famous “bean dish.” I honestly have no idea how she made it but the few times I had it, it was awesome. Don’t know why it was simply called “bean dish” either, but it stuck.

Beans get a bad rap these days. The paleo folks think our ancestors didn’t eat them so we shouldn’t, which in my mind makes literally no sense. Even if it WAS TRUE, humans have adapted to eating food in their communities. Norwegians have been eating fish (salted and otherwise) and root veg, while folks who grew up near the Mediterranean ate a lot more fresh veg and a totally different kind of fish. Over multiple generations we have adapted. You get the point.

Oh and its not just the paleo folks, there are “experts” out there now that are hating on beans because of what are called lectins. I listened to a podcast about it so it’s probably true. Regardless of what you believe to be true or even what is actually true, beans can be awesome. Think of the red beans and rice of Cajun/Creole fame. Literally one of my most favorite comfort foods ever. Like chili? Well outside of Texas most chili’s come with beans. I make two different versions that I will post sometime down the road and like a lot of dishes, each family seems to have a fave so will won’t try to steal anyone’s vibe.

That brings me to my personal fave bean dish. I have made it many times and it is always a huge hit. Sure it isn’t 100% homemade but it is darn good and you will love serving it for your next picnic, BBQ, or church outing.

Bean Dish

1 lb burger
1/2 lb bacon, chopped
1 medium onion, chopped
1/2 package taco seasoning
1 c brown sugar
1 cup tomato soup
1 large can Bush Baked Beans
1 can butter beans

Cook bacon, add burger, then onion and then the rest and simmer 3-4 hours. Works great in crock pot but the wow factor really pops in a cast iron Dutch oven.
